Re: Advice hunting knife steel and design.
I haven't oiled my Opinel knife blades but I stabbed both of them into a orange and left them in there for a day. It came out with a very nice patina. Neither of then has ever shown any rust. What I don't like about a Opinel's is the round handles (I still want to put the handles on a belt sander for a very short time), the locking mechanism is not one-handed and I got a tendency to cut myself a bit on the corner of the blade, closest to the locking mechanism. But the steel hold its edge quite well.

Re: Advice hunting knife steel and design.
You use to get Opinel in Stainless as well.
I have the Stainless somewhere. But the standard Steel is the one that has gone with since the 90's

Re: Advice hunting knife steel and design.
Get yourself a gut hook with a replaceable blade. Quick and very efficient.
Then, Opinel should do good work but you mention that you need a fixed blade. Have a look at the Okapi knives at TQM.

Re: Advice hunting knife steel and design.
I've always used Kershaw where I can. I have a Kershaw knife with gut hook. It works effortlessly and is very easy to clean.

Re: Advice hunting knife steel and design.
An Opinel for gutting?
A gut-hook is the most foolproof. There is a reason that most hunting knives have a drop point design with decent belly. Dual purpose gutting and skinning without puncturing stomachs or piercing skins.
