As pointed out a few times above:
Even if the flesh (surface fats and underlying tissue) only is cooled and not specifically frozen then the workability of the carcass is improved significantly.
"Body temperature" or warmer room temperature on a fresh carcass renders it unworkable and the flesh is jelly like when trying to cut and work it....
