Waterbuck.
A waterbuck cow and bull, waterbuck is in my opinion underrated by hunters, both as a trophy animal and as meat. They do have a musky smell, due to an oily secretion on their hair but this does not affect the taste of the meat as long as it is skinned correctly. When skinning one person should hold the skin while another person handles the knife, the person holding the skin should not touch the meat.

You are not wrong sir, I am working my way through wors and fillet from a waterbuck cow, very tasty indeed.

Looking for a trophy bull, but they somehow evade me.

Yep, i have a mate who shot one and as TStone said, gutted and skinned it himself with one of his laboures. He also knew not to touch the skin and the meat. But after skinning it himself he just couldn’t get over the smell and sold the carcass to a butcher. The butcher cut him out a fillet just to try. I was there when we put it on the braai. It was so good that the following day he bought the carcass back from the butcher
