    I found this interresting. I can't imagine a knife passing the 90 degree bend test and returning to its original shape.

    There are a few things one should consider when selecting a steel of choice and that is where the zknives article has more in depth discussion.

    People chose certain tradeoffs in a blade steel. Toughness over corrosion resistance, edge retention over toughness etc. Depends on what the person wants. Lately the trend seems to be high wear resistant steels with corrosion resistance.

    As for the 90 degree bend.

    How about a 180 without breaking?



    No matter the steel.....it all depends on the heat treating.

    Between 90- 180? None IMO it just demonstrates good heat treat of a specific steel IMO to have it bend to 90 degrees and spring back. If in any situation you are using a knife and it is bending 90 degrees I think you should be evaluating whether or not it is the right tool for the job.

    BUSSE kin are renowned for their heat treat and many makers, such as Stuart Smith have shown this on a regular basis.

    HOWEVER.

    Those knives are designed with strength and toughness in mind. Everything is about give and take with knife steels.

    there is no such thing as the "best knife steel". It all depends what you want to use the knife for. A sushi knife is not meant to chop wood, your hunting knife is not a filleting knife etc etc..Horses for courses.
