Take at least two full pigs.
Keep (at least some of) the legs of the warthog whole. Don't poke any holes! Warthog is dry enough as it is and you don't want all the precious juices to escape. If you do it in a large roaster in the oven, you could cover it with bacon strips or you can have it deboned and put a salami in the place of the bone.
One leg of the warthog goes in the Weber. I'll give you the long recipe for this one: Drive all the way to P&P, find the isle where they stock the salad dressings. Buy one bottle of Knorr French salad dressing. Put the leg of warthog in a big plastic bag and empty the salad dressing into the bag. No need to ad anything else. Let it marinade a bit in the fridge. Put it on the Weber with indirect heat for at least two hours. Let the meat rest for at least ten minutes so that the meat fibers can absorb the juices. Slice it thin against the grain and enjoy.
I've tried a few different recipes. I've tried braaiing it, but it's simply too dry for my liking. Some guys have great success with marinades, but that's not my taste. Rather use some of it in stews. Make a good quantity of mince and burger patties. You'll find that even the fattest warthog is still very lean, so you could ask the butcher to ad some fatty pork. Apart from cabanossi, you could try some warthog 'pork' sausages and it also makes a very good boerewors.
