    In my opinion, kudu meat is far superior to wildebeest for the pot.

    Just about any meat makes good biltong.

    Shot an old waterbuck bull 3 years ago. I made a poitjie with the fillet and it was nice. No "turpentine" smell or anything like that but we were careful with the carcass. The rest I turned into biltong which was also very good.

    G-Force , you have got it wrong. The lesser Kudu is a completely different species from our greater kudu, and is found only in East Africa. (Tanzania + Kenya).
    An expensive trophy as well, definately not on the menu for meat hunters.

    You are referring to the local (eastern Cape) variety of Kudu that is smaller in body and horns, so I am told. The difference here is barely on the level of subspecies.
    But it is still greater kudu - Tragelaphus strepsiceros.

    I would say kudu cow should provide 80 - 120 kg of carcass, dressed.

    At times (for management purposes)I instruct my hunters to shoot kudu calves - I then use 80 kg dressed mass as the cut-off for the higher price paid for a cow.
    (Even if a less than 80 kg female is pregnant, I stay by the cutoff and take my loss.)

    Willie yes you are quite correct.I googled it and have learnt something new.I was refering to the east cape "variety" thinking it was the lesser kudu.Thanks.

    Hi Smokepole, I shot a kudu cow in 2010, and she slaughtered out a touch over 80kg.

    BUT... I hunted a kudu cow 3 weeks ago, dressed weight was 100kg. Stoffberg area. so now you know, if there was any doubt

    I found my way here looking for suggestions on what to do with the fillets, they WILL be braai'ed on Saturday!

    Not true have personally seen lion's on a waterbuck kill on 5 different occasions in 3 different areas.

    I like to marinate my kudu fillets 2 days before braai get them, and strangely enough for this I really like Jimmy's Basting. Then onto a hot coal fire until medium.
    Cut on a wooden board into medallions, salt and pepper and serve

    Braai the fillets

    Back legs into biltong

    Sirloins cut out into 20cm pieces for braai (when braaing cut into 1" steaks otherwise I find they dry out

    Rest of meat into patties, wet wors and mince

    Fills my 110L freezer
