The easiest method is for braai wors a ratio of 1 to 6 which will be 1kg fat to 6kg meat and for dry wors a ratio of 1 to 10 which is 1kg fat for 10 kg meat.
Use tail fat. Doesn't need to be Persie fat.
This ratio is tops.

Ended up with a 17% fat %, tastes really good, not fatty but still juicy.
Had to battle a bit to get hold of fat alot of butchers were not willing to sell you fat, will be keeping the fat from the meat i buy in future.
It was a real task making the wors and then having to wash and clean up, but well worth it in the end.

Awesome - well done ! Its worth the effort, now you can somer brag to friends and family about how its YOUR wors, not some supermarket soya and ice water nonsense.....
