Springbuck Curry
The wife turned this little guy

into this, over the weekend, using a lamb curry receipe. She went a bit heavy on the oil but still excellent. Springbuck for me has to be the best meat for a curry.

Fry onion till see through, add cumin, star anise, cloves, curry leaves etc (buy a pack of briyani mix). A couple of pinches of whole cumin, a few star anise, a few whole cloves, etc. 1 stick cinnamon. Fry these for a few seconds with the onions. Add a few teaspoons of crushed garlic, ginger and dhania. 1 tsp mild curry powder, 2 tsp masala, or either to taste. This binds everything to a paste, so have some oil ready if it gets too thick. Within reason, you can't put too much.
Add meat and tomato, 1 use packet paste, and a tin of Indian style tomatoes. Add potatoes, and a cup or two of water, pinch of salt and pepper, as a capetonian in Durban, I add half a tin of apricot jam..
Reduce heat and let it simmer till potatoes and meat are soft. I use a cast iron pot I can put in the oven, so once I've started it all on the stove, put it in the oven with the lid on for two hours or so with the lid on.
This is for mutton, chicken cooks a lot faster, not sure about venison.
