Bushbuck Potjie - question on the meat
Doing a bushbuck potjie tomorrow.
I had a "boud" that was frozen, defrosted it and have had it in the fridge for two days. Tonight I deboned it and was amazed at how "snotterig" the meat and the membranes were. Is this normal?
Don't ask why I deboned it, family will only eat it in a potjie so there goes a great roast.

Snotterig sounds dodgy. When in doubt chuck it.

Does not smell dodgy, just has that strong venison smell.
Was there when it was shot, slaughtered and went into the coolroom. All the other meat from the butcher was fine.
Perhaps I am not used to the slimy nature of all those membranes?

Did you defrost outside the fridge and then put it back in or did it defrost slowly inside the fridge?

Defrost outside, out for 24hours then sent to the fridge for two days until tonight.

fry a small piece to medium rare in a pan and eat it. If bitter or funny smell then cook it for the dogs. If taste OK then cook it for the family

I think that might be the problem. Might have caught some heat and then back in fridge. Warm meat into cold fridge is recipe for food poisoning. Afaik, when you defrost meat one must use it and not let it stand. Don't know the science but its the way I was taught.

OK,
I kept two small steaks aside for myself. Will fry one early tomorrow a.m. and then will decide. I did wash the meat as a result of the slimy texture on the outside. Ah we live and learn.

Venison lasts much better in a freezer than mutton and beef. Even on freshly killed animals the membranes are snotty and I try to remove as far as is possible. Use vinegar and water to clean of the blood off the meat. Put in potjie and moer in the lekker ingriediante' like garlic (and garlic) and herbs.

I also like a bit of meat with my Garlic .
