This is incorrect. Too generalized!;-)
a lot of the new S/S have edge retention superior to carbon steel. It's all to do with elemental composition, size and density of those elements etc. I'm not completely clued up on the exact reasons but those are the basics. Someone like Marthinus on the forum would be more qualified to give more detail.
there are amazing steels available in stainless and carbon nowadays.

Tormek would do wonders IF one is experienced. Due to little personal experience with the Tormek I would not bring this Japanese blade near it. It is basically a modern version of the age-old "sand-stone-wheel-in-a-water-bucket-cranked-by-an-assistant". It also contains an aluminium piece used for either roughening or smoothening the surface.

I consider myself "experienced" on the Tormek. I have quite a few hours logged on it with quite a few blades. Nothing custom or of extreme value though, just hunting knives, pocket knifes, meat knives (in the kitchen), etc. etc. but I've managed to get the system running to grind a new cutting edge and sharpen to razor sharpness (I shaved with my hunting knife once after working it on the Tormek - rash was bad but it worked fine otherwise) in about 10 minutes. I'm still not sure how exactly it compares to old wetstones though. Stone grit and whatnot comes to mind. It can be smoothed out a little with the grit stone, but it wears down the grinding wheel incredibly fast so I generally avoid it.

Got my knife back from DSJ, it's as sharp as a Razor, thanks for the help, its nice to have the blade back to where it was.

I use a sharpening steel on all my kitchen knives, used properly (I am getting better) the knives are all in exceptional shape.
