Get you in the mood RUM & Coke franklin pie

Ok so you have been out a few times and nobody in your hunting party has shot jack yet.

get out your .22 and go shoot a few franklin. 10 or so. Sand Grouse, guinnea fowl 1 should do, partridge, any small game birds will do. I have even made this from mouse birds. delicious.


Rum and coke franklin pie.


10-12 franklin. plucked and gutted.


Steam in a pot for about 8 mins with 3 shots of rum and a glass of coke. keep the fluid for later

let cool and strip all the meat off.

In a separate pan fry franklin, onions, carrots and other veg as you wish. add rum and coke to the mix with salt and pepper. thicken slightly with some flour.

make a short crust pastry with flour and butter a touch of rum, with seasoning. and a touch of sugar. ( herbs etc of you wish sage basil, oregano is good. )

mix this till you get like a crumbly mix that will stick together when you press it. add butter to flour by hand an rub it in till it becomes crumbly.

press the pastry around the inside of a flat bread pot till you cover the bottom and all the way up the sides. keep quite a bit of the crumble enough to cover the top. about 3mm thick all the way inside the pot.

Take your franklin mix and pour it into the crust, sprinkle the balance of the crumbs over the top. put the lid on.

Cook as you would pot bead with a few coals under, around the sides and a few on top. but with this you must be careful not to burn the crust. so don't over do the coals.

Peak inside every now an then. just to see how the pastry is doing. add or take away coals if needed.

this will take an hour max to cook.

just enough time to have another drink and then serve it up with a rum shooter and a twist if lemon.

I serve this with a fresh grated salad of any veg.
