Jay, have you considered doing a knife course where you make your own knife?
Google Herbst knife making (or some such). I intend on doing something like that later in the year.

My old man gave me his knife as well which looks very similar. He bought it in Rundu in 1973, it was his knife he used in the SADF. Inscriptions are, "Rehwappen Solingen Rostfrei" It has a leather sheath with a Stag on it and on the sheath it says "Made in Germany". You are right it does hold an edge well the steel is very hard.
