The WB is the better transaction but the RHB will have better meat. WB is simply delicious with a dusty taste. It makes excellent patties, wors etc yet the older bulls have taken some years to gather an ample amount of that particular WB taste. RHB is one of the softer tasting meats and the prime cuts (steaks from the rugbiltong, Rumpsteak etc) can be grilled without any spicing or marinade.

I shot an old Waterbuck a few years back and made it into biltong and drywors. The advice of being careful to ensure the hair doesn't touch the meat is sound, as the oil from the hair can taint the meat. There is a lot of meat on a big Waterbuck bull.
Never had the opportunity to hunt a Red Hartebeest, but hopefully that will change soon!

Friend has farm in Thaba, he shot a WB and BWB and we made some wors. Must say the WB wors was fantastic, also the WB was much bigger than the BWB. I will definitely shoot a WB next year
As everyone says, make sure you slaughter the WB correct, what we did was first to wash the complete carcass with sunlight soap, then we / they started to slaughter the WB, the one only touching the skin the other only touching the meat.
