I carry 2 knives. A folder and a Swiss Army that I have been carrying for close on 30 years. The latter is showing it's age with the blade sharpening.
Mine gets used at least once a day. mostly more. Once you get used to having a sharp knife on you, you will tend to use it more.
If you carry only a folder for SD and want to use it for everyday purposes then you should get good at sharpening. An SD knife should be very sharp.

Haha, this time it is all legal! I read on Gunsite some time ago that it is easy to stab through the side wall of a tyre. So I went outside and stabbed through the side wall of an old worn tyre to test it. The other time I was building a jungle gym for the kids and needed to add tyres. Out came the knife for some holes.

As been mentioned, once you have it on you, you start using it more.
Today mine was used to cut some steak at lunch.
The other day someone was looking for a tin opener to open a tin of tuna
Don't use it everyday but at least once a week, usually more

The first thing I ever used my EDC was to cut of an extremely dirty, messy and overall terrible pull up nappy (I didn't realise they were designed to tear as it was the first pull up nappy my daughter used).
After that (and being cleaned), I use it mostly for fruit in the office, then odd jobs around the house. Because it's also super sharp, I use it to cut steak off the braai. You never realise how useful it is until you have one.
I also carry a small pocket leatherman which is used for a multitude of things. It's broken at the moment (being repaired) and I really miss it.
My mates used to mock me, but now they all want my help invariably as I'm the only one with a knife.

Uses of EDC knives in daily life ?
In my previous job I used to install and repair blow molding machines. Used my knife daily to cut open blown containers to check for defects and material distribution. Anything from milk jugs to 5l oil containers and even 25l drums.
