I listed a samsung s10 ad on gumtree and olx, got about 20 of these scams in 3 days. Some try a fake netbank proof of payment others try payment through some dodgy app.

I used to flog all our unwanted household junk on Gumtree and OLX with great success. However, at some point the only interest I ever received was from scammers. Those platforms are no longer usable.

I tried reporting the scamsters on OLX and the reports fell on deaf ears.

I don't even want to post it on olx or gumtree for cheaper because I don't want to be bombed with scammers. Maybe I will post the ad in the "for sale" section some time.

I would set the deal up and then transfer the courier fees into another account and just leave enough for pay pall to reverse the 10000.00

Not so easy because PayPal reverse the full 12000 (in my example). The extra 2000 gets marked as negative in your PayPal account which you now owe them. Unfortunately PayPal probably have more lawyers than yourself and are probably pretty used to debt collections.
