Who makes the best "Bushpig Salamis" in Pretoria or surroundings?
I need to know who specializes in Bushpig and NOT WARTHOG as there is a huge difference within their meat and taste.
I have a Bushpig that I would like to turn into Salamis Only but it needs to be very good.
Anyone have factual names of people or butcheries that specialize in Bushpig meat?
Please don't suggest all the butcheries in Pretoria as I know them all and what they can and can't do as some are ok and others shocking.
I am looking for the person or institution dealing and specializing in Bushpig and salamis and does a great job.

I went to a Crown Spice Hunters Evening in CPT end last year.
Apparently to make a Salami correct takes over a month.
As you also have to control the heat over this period.

Wildshoekie makes a very good (cooked?) salami, albeit I've only supplied them with warthog to do so. If I do bag a bushpig, I would entrust it to them.

A couple of things... it is very hard to find a butcher who has the skill and is willing to do this for a customer. You make a lot more money sawing up a sheep in a few minutes than you will make curing meats over a few months. It is also very technical. Most butchers don't have a clue about getting nitrate concentrations right, or getting cultures growing properly. You need a degree in food science or biochem, not a blockman certificate to get the chemistry and microbiology right. You also need specialised incubators that control temperature (12-16 degrees) and a constant humidity of around 60% with air changes. They cost around 200-500k which is way above that of a biltong dryer. In some parts of the country you can make do over winter at room temperature.

Thanks for your advice and offer I really appreciate it.
I am looking for cooked salamis and not the continental dry-cured type that takes up so much time and effort and is hellish expensive to make.
I would have loved to have a Presunto Ham hanging in the cold room.
