equal parts olive oil and sherry mixed with fresh garlic and freshly picked Bay leaves. Great on springbok! I have a bay tree in my garden!

Was wondering, what active ingredient(and why) in the marinade will make the meat more tender/soft when eaten?

Soya / Olive oil / Red wine vinegar all warm. When melted butter sets again it makes a greasy marinade layer on meat. Accidently found this out. Much easier to keep marinade on meat. I Heard about a nice trick for Steak from one of our Food Technologists!
Rub with Brown Sugar and Spice mixes and then lay on a bed of Papaya slices and cover with Papaya slices. Rest overnight or a couple of hours
Papain used in meat Tenderizers are a dereritive/made from Papaya and is a natural Meat Tenderizer and adds a sweet Flavour to the meat. It is also a more natural way of Tenderizing your meat.
