Slaughtered weight of different species

Hi everyone,

Found this resource showing the expected yield of different species. Does your experience say the same?

Of this amount, what percentage roughly becomes biltong, stewing cuts, mince etc? To what percentage does the biltong dry out?

I assume the 'biltong massa' is after drying, right? I.e. Blesbok ram, meat amount 29kg, of that roughly 18kg is wet biltong cuts, dries to 9kg?
