    You use to get Opinel in Stainless as well.

    I have the Stainless somewhere. But the standard Steel is the one that has gone with since the 90's

    Get yourself a gut hook with a replaceable blade. Quick and very efficient.

    Then, Opinel should do good work but you mention that you need a fixed blade. Have a look at the Okapi knives at TQM.

    I've always used Kershaw where I can. I have a Kershaw knife with gut hook. It works effortlessly and is very easy to clean.

    Buck has very good steel, especiallyon their better knives, and Puma surprised me. Great steel!

    My ghetto fix for any curve and even some odd serrations is a rat tail file with a bit of emery paper wrapped around it.

    Dowel stick with sand paper, or a jeweller's drill with polishing bit.

    An Opinel for gutting?

    A gut-hook is the most foolproof. There is a reason that most hunting knives have a drop point design with decent belly. Dual purpose gutting and skinning without puncturing stomachs or piercing skins.

    Thanks for all the advice. I had a look the Mora website again. It turns out the carbon steel Mora knives are not classified as "hunting knives" at the website that I use for knife buying. That's why I missed them.

    For €12, it's worth the gamble to give it a go. I also ordered a Gerber gut hook with disposable blade. I'll use that for a while as well and see how I like it.
