    Some butchers use a lot of beef brisket meat and fat in drywors and braaiwors. If not used in your wors it would have been used in mince or his own wors. What is the price of mince these days? That is what you are going to pay additionally. Then others use 80-90 % game mixed with only beef fat.

    I process all my meat self, I don't write up an calculate, but making drywors or braaiwors, especially when using 30-40% beef in it is not cheap!
    Fully agree, I used to do it myself as well before I got lazy ;-)

    The original question was intended as ballpark figures to see what is being charged in certain scenarios, as no 2 butchers will use the same % mix and what not.

    I paid R28/kg. Was mince, wors, biltong, drywors and some steaks. All packed as I wanted and vacuum sealed.

    I pay R22 p/kg on carcass weight - Steak, wors, sosatie, patties, droewors, biltong (already spiced). Everything vacuum sealed in 1kg packs. I have done impala, gemsbok and now eland with this gent. Next level quality & service.

    Handed the eland in the sunday afternoon and got a call the following thursday morning that I can collect.

    I paid R30/kg processing based on carcass weight, lamb fat R65/kg, brisket fat R45/kg last year.

    Thanks, that's a hell of a deal. I have a friend who does culls and even at fairly substantial bulk pays more than that. Will forward details to to him.

    We started doing it ourselves cost of getting all the basic gear and tools was more or less the same as the previous bill from the butcher.

    It's alot of work so I totally get the prices butchers are asking.
