Processing Game Meat
How much do you pay?
Shot a Kudu for my sister (bargain for her, the meat is free), she took it to her butcher, 173kg's, he charged her R 2,800.00 = R 16.20/kg. She was very surprised at the cost, especially since I told her my butcher charged me R 1,250.00 to do a Blue Wildebeest. I normally pay between R 8.50 & R 12.00 / Kg for processing depending on what I want done. Drywors, Boerewors, Biltong, Mince, Potjie meat & Stirfry.
Sooo whats the going rate?

Best I have heard of is R5/kg in Meyerton.
R16.20 is rough!

Firstly I dont like to take my meat to the butcher , its diluted and the best cuts seem to shrink ,
But if you have to wont pay more than 8 rand KG ,
My dad owned a butcher for many years so I DIY .

Two weeks ago I paid the butcher R1750 for a BWB, Impala and warthog.

The butcher I used this year charged me R11/kg and the one I used last year asked R15/kg.

R10- per Kg to proces the entire animal is what's normally charged. Some butchers don't make a distinction between carcus weight and processed meat, so often a quote of R10- per Kg is alot more once processing is done. Also, did they make alot of wors? Casings and spice are quite costly.

the butcher i used in the first week of june in potch charged R3.50 p/kg labour excl spice etc.
I took two impala which of 57kg together and one warthog of 43kg.
I kept 2 impala boudtjies for the oven vacuum packed
and made of the best biltong cuts biltong and the rest braaiwors.
the warthog they converted it into cheese sausage and smoked one b o u d for the oven and cut the ribs in spare ribs.
R950 for the hogs work and R650 for the impala's

My butcher charges me R7.50 per kilo excluding casings and spices. They take the carcas weigh it and times it by R7.50.
The only other thing I can think of that pushed the price that high was if she had allot of boerewors made where they had to put in some beef and other fat as well.

Eish, you guys get good rates, we here in Witbank pay R15/kg on average for billies, droewors + braaiwors.
Even had places charge R23/kg, not taking my game there. Last year I had the Eland done for R12.80/kg

Ja, I thought my sister got smoked, should have let her husband take it in but he was at work, sure the guy saw her comming. Now they complaining ... not enough freezer space so all the inlaws are scoring, eish, its not as easy as shopping at Woollies.
I also paid R 900 fo my piggy, cheese grillers, cabanosi & smoked ribs.
