    Use the "up to date" cultivar of potato (gravy soakers) but add very late so they don't melt away.Certain cultivars are not available all year round, these become scarce around Christmas. BP13 is an option then.

    Thanks a million for this recipe, Andrew! Made it yesterday just leaving out the potatoes and adding lots of fresh chillies - it was PERFECT! Easily the best dish I've ever cooked.

    Awesome, glad you enjoyed.

    As you are from the Cape I simply must send you my version of Portuguese Fish Stew. You can also add as much bite as you want, served with a crusty bread it is a delight.

    Something nice to go with your curry other than rice for a change (it's a hit every time I've made it so far) is home made Rotis. Recipe compliments of Curry me home again by Yudhika Sujanani.

    I'm not really a curry fan, but her recipes and spices are just amazing to work with and the Rotis a great hit every time I make them. (Curry Me Home spices @ selected Spar's).

    For the Rotis you'll need:

    3 cups cake flour
    1 teaspoon fine salt
    1 1/2 cups boiling water
    5 tablespoons sunflower oil
    Melted butter to cook.

    Method:
    Place flour and salt in a mixing bowl. Pour in boiling water and mix with a wooden spoon.
    Pour oil over the dough and mix to combine.

    Knead the dough while it is still warm until smooth. Roll into a large ball and keep kneading until cracks are not visible.

    Roll dough into a length and slice into 12 equal pieces. Roll each piece into a length and curl up half the length. Curl the other half in the opposite direction. Fold one piece over the other.

    Dust the pieces of dough with flour and put into a mixing bowl. Cover with a damp cloth and leave aside for an hour.

    Roll out each piece of dough into a round shape, ensuring you keep your surface dusted with flour.

    Once all the dough has been rolled out, cook rotis in a non stick frying pan.

    When small bubbles and freckles appear, flip the roti over and drizzle with a little bit of melted butter. Turn the roti over and lightly brown on the other side. Remove and place on wire rack to cool down.
