I would highly recommend anyone who takes birds or rabbits serious as food get this book.
It is written by Euro folk and they have been using these types of animals like we use buck but for a few hundred years longer.
Some of the recipes are a few centuries old but the pictures and methods are very well done.
It has everything you need to know and a bit more.
