For that price I would take it....meat is good so long as prepared right....but the same can be said for beef!

I am reviving an old thread here but I do so because I used the opinions expressed here and I want to report back for everyone's benefit.
I shot a Waterbuck cow 3 weeks ago and decided to process it for the table. It was a very good decision. The skinning was done carefully and we cut all 4 lower legs off quickly. I got the butcher to make sausage, mince but majority was cubed to provide fresh meat for large functions. The meat is truly delicious and I will do it again.
The skinning process was easy but just keep away from the meat if you touch the hair.
