Anyone here that makes their own bacon biltong?
As the title states.
I would like to try making my own as the butchery is asking around R 360 p/kg.
Any recipes and advice would be appreciated, don't want to mess around with pork.
I was on google, but I would rather try a tried and trusted recipe.

I found this recipe,seems very similar to actual biltong,I am going to give it a try tonight

Ingredients
1 kg back bacon
4 tablespoons salt
1 tablespoon ground black pepper
1 tablespoon chilli spice
125 ml white vinegar
How to make it
Place a layer of bacon in a glass dish
Sprinkle with dry spices mix
Place next layer of bacon
Spice and repeat till all bacon spiced
Sprinkle over vinegar
Cover with plastic wrap and rest for 4 hours
Hang to dry, approx 2 days

I saw that one as well. Please let me know how it turned out. If this recipe works I can see a fairly significant increase in my cholesterol level.

I have some garlic powder, onion powder and even some smoke flavouring that can all get in on this act.

Is bacon biltong "safe"? I was always under the impression high heat was needed to kill the parasites that can be transmitted from pig to human

Wouldn't some curing ( pink ) salts be necessary for this over and above your nor mal biltong mix ?
