Forgot to tell you, don't waste your time with Armadek.
Get Rystix Armafloor.
Clear Gloss or Matt.
You can apply a stain to the raw wood, then overcoat wuth 3 or 4 coats of Armafloor.
Please lightly sand between coats with 320 or 400grit sandpaper.
Use a nice fine bristle brush and apply thin coats.
It gives a beautiful hard wearing finish.
We only use Armafloor on all our clients floors and kitchen counter tops.
Its specifically formulated to be used on floors and bar counters.
Water and alcohol resistant, quick drying, and the best thing is that you can touch up any scratches very easily

Oh ya, it also is non yellowing, so it won't darken with age, and it brings out the true colour of timber.

Thanks, really appreciate the advice. There are certain types of knife that lend itself to varnish and others that don't, the bush knife I am busy with doesn't work well with varnish because of the exposed tang - the varnish doesn't look good on the steel. The japanese style knife could be easily varnished and would be a lot better considering it's a kitchen knife.
I found some tung oil locally at Strand Hardware, R288 for 500ml - it better be worth it haha.

True Tung oil is rather pricey and worth it. There are other products referred to As "tung" oil that is something else and much cheaper.

Department of Agriculture specced it for their sheep shearing sheds or woolsheds to be used on tongue and groove flooring

Eureka! Company name is Globelins.
They originally and still make danish furniture oils.
I think they have a website running and offer a mail order service
