Perhaps then caramelisation is the wrong term. I don’t mean caramelisation as in crystalisation when you apply a flame to the sugar on a pudding, for instance.
When you taste UHT milk, it also an almost-caramel taste, the high temp it was subject to causes the sugar to undergo a change at a very fine level.
The same happens to meat when it is seared on the grill.
It’s feasible that the sugar that comes into direct contact with the coal undergoes the same change. Just enough to part a somewhat different taste to the drink.Sent electronically, thus not signed.

However, when meat is on the grill, it's the proteins as well, and the process is called the Maillard Reaction. Similar, but not exactly the same.
That being said, I've never tried to caramelise lactose. I don't think I want to try it either. I think the flavour change in the coffee is rather because of the ember being doused in the coffee, resulting in some ash and whatnot staying behind, along with SOME of the coffee being burned on the stick as the water evaporates.

In the "old" days weren't the burning stick in coffee trick used to make the "moer" sink down to the bottom of the pot and cleaner coffee could be poured?

Yes - or so the story goes?
I believe it’s the burn roast effect of the coal on the coffee in the water and perhaps a bit of wood smoke steam that does it.
I have never tested this at home.
Always with some wild plant stick.
If you do this at home, I suggest do it outside at a braai area, just all adds up better.

In Turkey , the Asian rural part they make a simple vegetarian soup and just before serving it they stir it with a piece of charcoal. Apparently it break out the flavour of the herbs and spices .
This thread reminded me of it .live out your imagination , not your history.
